Dinner Recipes The Whole Family Can Enjoy

Ground Beef Bowls:
Simple, delicious, and nutritious.
Ingredients:
- Lean ground beef (1-2 lbs)
- Cottage cheese (1-2 containers)
- Sweet potato (4)
- Avocado (2-3)
- Hot honey
- Start by prepping your sweet potato and ground beef; chop up your sweet potato into bite-sized pieces and air fry them at 400 for 15-20 minutes (I recommend baking in batches of two if your air fryer is on the smaller side)
- While your potatoes are cooking, cook your ground beef on the stove until browned, adding salt, pepper, paprika, garlic powder, and red pepper flakes to taste
- Be sure to drain your ground beef
- While these are cooking up, grab your cottage cheese from the fridge (I prefer 4% Good Culture Cottage Cheese) and cut up some avocado to add to your bowls
- Once everything is ready, assemble: in a bowl, add in your sweet potato, ground beef, cottage cheese, and avocado, topping with a bit more salt and pepper, drizzling with hot honey
- And enjoy! Make enough food to feed your family or for a week of meal prep!

Taco Time!
Ingredients:
- Lean ground beef or ground turkey (2 lbs)
- Refried beans (20 oz)
- Tomato sauce (6 oz)
- Flour tortillas (12)
- Taco seasoning (3-5 teaspoons)
- Mexican blend or cheddar shredded cheese
- Toppings (optional): tomato, onion, cilantro, sour cream, quac, shredded lettuce, salsa
- Brown your ground beef and drain any excess oil or fat
- Add in your taco seasoning, beans, and tomato sauce
- Preheat the oven to 375 and spray a glass pan with oil
- Spoon taco mix into shells and place them side by side in the pan
- Top each taco with shredded cheese and bake them for 15-20 minutes
- Once they are crispy and cooled, serve and add your toppings

- Sour cream (2 tbsp): 60 cal + 5 g fat
- Quac (2 tbsp): 50 cal 5-6 g fat
- Extra cheese: 100 cal per ¼ cup
- Veggies = minimal calories, load them on there!
Spaghetti Squash Pasta:
Ingredients:
- 1 large spaghetti squash
- 1 box of feta (8 oz)
- A cup of cherry tomatoes
- Olive oil ( 4 tbsp)
- Minced garlic (2 cloves)
- Fresh basil (¼ cup)
- Optional: ground beef or turkey
- Preheat the oven to 400
- Cut spaghetti squash in half lengthwise, scooping out all the seeds and guts inside
- Set on a baking sheet, facing up, and drizzle with olive oil
- In each half of the squash, add an even amount of feta, tomatoes, basil, salt, pepper, and red pepper flakes to make it spicy
- Bake for about 40-50 min, or until fork-tender
- Pull it out of the oven and use a fork to pull the squash apart, resulting in strands that look like spaghetti
- If you wanted to add more protein to this dish, cook some ground turkey or beef until browned when the squash is cooking, then mix it into the pasta once ready to serve
- One-half of the squash typically feeds one individual, so double or triple this recipe based on the number of people being fed! Enjoy!
